Elephants are quite intelligent, can do a lot of work and rather fast for their size. another word for a donkey is a jackass, they are stubborn and don't like to work. I think both symbols are quite apt for their respective parties.

I've read and heard different things. One of the things I came across was a description of a newspaper-man in a column describing each party to his readers. The jackass was the democratic party for their stubbornness and the elephant running amok out of control for the republicans.
