It's the uvula (yes, that's the correct spelling). One of the things it does is keep food or drink from going into the wrong hole. Maybe that's why it gives some of us our gag reflex.

As all the other answerers have pointed out, the fleshy pink thingy in question is called the uvula. And no, it doesn't automatically make you throw up when you touch it (try it out and see).
Finally, the answer to a question you didn't ask: Why is it called the uvula?? It comes from the diminutive form of the Latin word "uva," which literally means "a grape," because of its shape.

it's the uvula, but it's not responsible for closing one hole or the other, there's another flap that does that.
when you touch the back of your throat in general, it kicks in a gag reflex which can lead to vomiting. it's not the uvula itself, it's the whole back of the throat.
