You can memorize some conversion equations or you can figure it out by knowing the physics behind them.

Here's the physics...water freezes at 0 deg C and 32 deg F; it boils at 100 deg C and 212 deg F. Therefore the interval in units is 100 - 0 = 100 = 180 = 212 - 32 from boiling to freezing. Therefore, 100/100 = 1 deg C = 1.8 deg F = 180/100. Or we can write m = 1.8 deg F/1 deg C, which is a rate of F degree per C degree.

Now, a straight line equation can be written as F = y = m(x) + b = mC + b; where b is the y intercept in deg F and C is the independent variable in deg C. What's the b value? Its whatever F is when C = 0; and from the physics, we know that's F = 32 deg.

So there you are, the equation derived from the physics: F = (1.8/1.0)C + 32 degrees. You can use a similar approach to derive how to convert F to Kelvin, C to Kelvin, and vice versa.
