Yes. In this case you have more than one dad (several dads, since dads' indicates a plural possessive) and their shoe is being munched.
If you had only one dad it would be:
"He munched on my dad's shoe."

no that sentence says he munched on all of your dads shoes. plural is before the s (dad's)

i dont think so it should be singular, since its only one shoe but it is your dads shoe
