A serge seam is one in which the main stitching line and a cut-edge finish stitching are done in one step. Almost all women's dresses and skirts that are mass produced and inexpensive use serged seams. (Look inside your jeans, too--the outer leg seam is usually serged.)

A Hong Kong seam is used on fine fabrics like lace and velvet. Formal ballgowns and bridal gowns of high quality is about the only place I've ever seen it for sale, although some home seamstresses do it.

A channel seam is used in the waistbands of good-quality men's trousers.

Any garments. Dresses, coats, pants. Anything where you want a seam that has a finished edge or a hidden edge.
