It is impossible to have a knife blade that never needs sharpened. I know there are many companies that claim this, but impossible.

Unfortunately the harder the steel the easier it will chip and its harder to sharpen, so every knife maker has to make a compromise between how long a blade will stay sharp and how easily its to chip and resharpen, the best kitchen knifes reach this trade off sweet spot at Rockwell hardness of 57-59, some Japanese swords may reach 63, they used the back of the blade for impact to protect the edge as at that hardness the edge is fragile. Serrated knifes never need sharpening but they are basically saws, ceramic blades stay sharp for a long time. No there is no steel blade that stays sharp for ever.

Its better to buy steel than steal it.
The hardest steel blades ever produced were the master crafted Japanese Katanas. These were nickel iron laminated with high carbon steel.
They were formed by folding a red hot steel billet over and over. The top swords had over 64,000 layers.
There were master craftsmen whose only occupation was polishing and sharpening these swords.

Just to clear up what centrete... is saying, 64000 layers is no big deal. It's just one thing people use to try to make you think the Japanese sword was some magical weapon. That many layers only takes folding the steel 17 times. Yes, 17 thats it. Since you double the amount of layers every time you fold it, it takes nothing at all to get that many.

'Never' is such a strong word. In practice, many good quality chef's knives and serrated knives, properly used and cared for, can last decades without sharpening.
