I am wondering which processor to get, either the Intel Core 2 Quad with 2.4Ghz and 1066Mhz, or the Core 2 Duo with 3.0Ghz and 1333Mhz.
Does the boost in the Duo's FSB speed (1333 instead of 1066) make it a better choice, or will the quad core come out on top simply because it is a quad core? Note that the prices in the 2 chips mentioned are pretty much the same, about $270.
I will be playing a lot of graphics intense games as well as a lot of multitasking.
**I know that I could benefit from the increased FSB speed (which link the CPU with the memory and gfx card), but will the "slower" CPU speed of the Quad make it less comparable?
Do they make a Quad core with a faster FSB yet?

The motherboard that I will probably be using for my build is the
ASUS MAXIMUS FORMULA SE or a similar ASUS with the same cpu socket and fsb speed.
I have a 700w power supply and 2 gb corsair pc8500 ram, and will be purchasing a 8800gts or gtx later.

I will be overclocking pretty much everything, so if I will be able to crank up the cpu and fsb speeds of one chip better than the other, let me know.

P.S.
Should I worry about the core stepping (version) of the processor I choose or are they all still the same?

Since you mentioned that you will overclock, I suggest that you get the Q6600. E6850 beats it at stock speed but when both are overclocked, Q6600 quadcore becomes unbeatable. See for yourself:

Extreme QX6850 runs at 3.0Ghz and 1333mhz FSB, BUT price is also QUAD or almost 4x that of Q6600. I would rather spend the bucks on the graphics card.

Get the core 2 duo. There aren't enough apps that take advantage of multiple cores to justify the quad. Most games now only use one core, and a core 2 duo will take care of most anything you throw at it. It will be much easier to go with the core 2 duo and overclock that.

Get Core 2 Duo coz Core 2 quad seems to bottleneck ur pc!!
Get an 2.8GHz C2D and overclock it to 3.2GHz. It is better to have c2d against core 2 quad and core 2 extreme!!
