Who is the most well known composer since Hayden & Mozart to write more than 10 symphonies?

Bruckner wrote 9 numbered symphonies plus an '0' and an '00' making 11. The American Hovhanhess wrote over 50 (I'm looking at a recording of number 53 on my CD rack as I type). The Russian Miaskovsky wrote well over 20 - I'm not sure of the exact number.

I sure you would be interested in Bach. He was a great with the organ, violin, and cello. He had about 1,127 works. Including symphonies, divertimenti, and chamber music, etc. But you should google it. Because there are many great composers out there. So explore and have fun!
