Because a diagram puts all the units in a scaled down picture/representation that makes it easier to see the "whole" picture. In the field, units can be huge and covered with vegetation. It can be hard to see the "whole" picture is its several kilometres in area. But remember when you're looking at a diagram, some field geologist did the grunt work to map it.
