Perhaps they can't find anyone to teach New Jersey law?
They are, traditionally, a research institution. However, they do have several professional schools (engineering, architecture, etc).
They recently started offering a Master of Finance degree through their economics department.

Princeton University does not have a law, business, or medical school because it is a research institution that emphasizes the humanities. The majority of its funds are diverted to popular studies such as music, anthropology, economics, etc. Why isn't there a law, business, or medical school? Well, to be candid, the university was planned that way.
