Fat is translucent and fills the spaces that in paper are filled with minute opaque air filled fibers. By filling the spaces, the air/fiber interface is wiped out and the light is transmitted by the fat.

Fats make paper transparent because they reduce the bending or refraction of light passing through it. This is why oil is added when using the 100x objective of the microscope because oil reduces the bending of light.
