Actors were more animated and theatrical, almost overacting at times.
If you think of it, there was nothing to base acting on, so it was "entertainment"--literally. Now there is too much realism in acting whereas back in the 50s it was all done for entertainment value or the great epics were made to withstand time....and they did!

I think the sense of humour has changed. If you watch the Marilyn Monroe, Audrey Hepburn or Three Stooger movies - it's more light hearted or slap-stick humour.
Nowadays, with movies like The Heartbreaker Kid, Big Daddy, Scary Movie, You've Got Mail, the humour is more witty and sarcastic, or still slap-stick but in a way that would have been viewed "vulgar" back then.

Its more open today back then a pie in the face was funny but not any more.
