We are going out of town and would like to have our
kids grow one or more types of vegatables indoors with
a grow light that would be ready to eat within
three weeks. Any ideas?

Well you could always eat bean sprouts. They don't take long before they can be eaten.

I think alfalfa sprouts are the fastest to grow and sprout, then they can use the sprouts on sandwiches and in salads. Anything else usually takes 30+ days to even get to 1". Radishes might be quick. Good Luck
