ammonia is highly soluble in water,therefore if the apparatus is moist,then dissolution of ammonia may take place,which might create a partial vaccum in the apparatus ,which is undesirable.Also,impurities like CO/H2S may poison the catalyst that is finely divided iron(Fe).

Because moisture sucks up ammonia, which you are trying to make.
