Whats the fastest porsche ever? HP? 0 to 60, engine size?

Fastest in terms of top speed would be hard to determine, because it would have more to do with the car's aero package and gearing setup; in short though it would be one of the car's aimed for use at Le Mans. The 917K was very quick here, but the long tail version (917LH) did see higher top speeds along the Mulsanne Straight. But the 936. 956, and 962 also saw extremely high speeds here, and in an era when the straight had been toned down a great deal with chicannes. In the end, I think the 962 version that ran in 1994 is probably the fastest in a straight line (the street version produced by Dauer has a top speed of 252).

The 917/30 as raced by Penske would be the highest HP car delivered from the factory. In qualifying trim it is said to have been capable of as much as 1500hp - producing a definite improvement over the 917/10. However, special mention should be maid for the 1.6L TAG engine produced for Mclaren, producing 920hp in qualifying trim.

The 12 cylinder engines used the 917 series would be the largest displacement used by Porsche, topping out at 5.4L by the time the 917/30 was produced.

In terms of 0-60 times, again you will have to deal with specifics of car setup and also test situations (what's the ambient temperature, what's the surface, tire selection, etc). Complicating the fact would be that such figures are seldomly released for race cars. We know that the road going version of the 962 produced by Dauer produced a 0-60mph time of 2.6 seconds. Given that the race version would be lighter, and could be geared to maximize such a run, that time would be much better. If such a test were ever done, I would think the primary canidates to win would be either the 962 or GT1, with an outside chance going to the RS Spyder (the 917 would likely have too much wheel spin to compete against the lower powered moden cars). The 961's AWD could make it a challenger in this area as well. The Porsched powered TAG-Mclaren could possibly beat all of these, but isn't really a Porsche outside of the engine.

Not sure if the 917LH might have been the fastest Porsche, with top speed reported at 248+. Vic Elford says he drove these cars at 250mph at LeMans. 0-60 would be about 2.5 sec.
The 917/30 referenced above is said to go 245+, with 1500+ HP: "The 917/30 could go from 0-60 mph in 1.9 seconds, 0-100 in 3.9 seconds and 0-200 in 10.9 seconds and on to a top speed of 245 mph+. "

The 917/30 Can am car from 1972. 1100 HP with overboost up to 1400 HP. 17 inch wide tires, super light, etc. Considered to be one of the scariest cars ever.

962 is up there too. Group C cars were horribly fast. ~850 hp.

As for road cars, the Carrera GT is number one (assuming you dont consider the dauer 962 a porsche vehicle). The new 997 911 GT2 is just about as fast around a road course.
