I change course.

I correct it & continue on with what I'm doing or stop what I'm doing altogether if that's what the correction would indicate is the best thing to do. And sometimes, if I've spent a lot of time on a project and find a major error, I'll put it aside for the day & get back to it the next when I'm in a better, and fresher, state of mind.

I briefly agonize over my mishap and work out several scenarios that would've been better. I then try to convice myself that it'll be OK, try to figure out what I can do to fix the current problem, and try to learn a lesson; I also usually end up remembering the error along time later, depending on it's magnitued.

I go back to my work and try to negate what I have already done (if possible), and then I proceed along what I now believe is the proper course.

I usually get upset at first then I immediately rectify it to the best of my ability.
