I'm going with 'Ash VS. Demons' in Evil Dead 2: Book Of Dead. When he battles his own hand is 'classic'. ;P

Gladiator. The first battle scene in which the Romans defeated the Gauls. It was the most realistic version of a battle that I've ever seen on screen. No CG. Battle plans were realistic to the era and even fight tactics were right.

Personally,

I've always thought the way the vampires were dispatched in the original "Blade" was unique. It was clever the way they made them burn and disentergrate rather than have blood and guts flying over the screen.
