im looking to drive to bulgaria but would like to get as far as i can by boat.

From north to south the ports in Italy are : Venice. Ancona, Bari, Brindisi. The furthest (closest to you) is Venice, and therefore the longest the trip on board.
Point of disembarkation is and should be Igoumenitsa. New road is roughly 500 km to Thessaloniki and a further 150-200 to three different border points to Bulgaria. I gave those in previous answer. All other arrangements are longer in time and/or distance.
Other solution is you put the car in a container in UK which you then ship to Thessaloniki GR, or Varna BU, take a flight there and wait for the car to arrive.
