I Love plain old COLBY. But i like it warm and chewy! Like in macaroni and cheese. Next would be Swiss on Bohemian rye bread.

I love blue cheese and have all my life. I leave it out until room tempature (pretty much until it's the only thing you smell) and slather it on carr's crackers...it's so good....
