I had one a long time ago, its gone but I was wondering..being that the flesh is dead, does it become necrotic or gradually rot and slough off or anything? Or does it just heal very slowly?

It could heal or it could go into a systemic infection and kill you.

3rd degree burns that don't get infected or suffer other complications generally heal with scarring. As you note, the flesh is dead so the body has no choice but to replace it with scar tissue. A visit to the plastic surgeon can be helpful if the scar is cosmetically unattractive or if the scar limits the range of motion of a joint.
