Call the places that use them - banquet halls and hotels for a connection with the sources. It seems to me that when I have seen news stories on ice sculptures, the people doing them had chefs training and also did butter.
Ice is basically carving away, so the techniques of marble and granite would apply - claw chisels, hammers, and scrapers.
do a Google of 'ice sculpture new york' and get lots of responses www. icewonder.com and www. icemiracles.com both mention a new york connection.
