I've been trying to access www.torrentspy.com, but haven't been able to lately because they have made some updates to the website in where people in the U.S. can't access it.
So is there anything I can do to bypass this feature, like making my IP appear to be that of a foreign country? Or is there any other trick you might know to get past this?

1.
You could purchase a shell account with a foreign ISP (ie, sci.fi
Log into the shell and then to the site you are trying to reach.
2.
You could use an anonymous browsing website to log into first such as the-cloak.com
Your real IP would be exposed once you began a download so if they are blocking this you would not succeed...

You will need a proxy server to disguise your IP address.

you can't alter your IP address that comes from your ISP who is also in the us of a... can't be done
