I know it's difficult to choose just one...so if it's easier you can list a couple more...

good question, and you're right its hard to just pick one.
i would perform either "come sail away" and play both the piano (although now you'd have to use a synth or keyboard since rhodes pianos like the song is originally performed on aren't made anymore) and the synthesizer (for the solo) as well as sing. so far, i can do all of that, except the singing part (my voice will never go high enough for that one part... :( )
or, i would simply play the synth part for journey's "seperate ways"... it's so fun to play, although the chorus is kind of humorous to watch being played (when the left hand comes up the right goes down, and vice versa, until the end of the chorus).

For Those About To Rock by AC/DC.
or Metallica's version of Bob Seger's Turn The Page.
Both songs just plainly rock.
And I'd be lead guitar, backup vocals.

i'd perform "put your dukes up john" by the little flames but in the style that arctic monkeys covered it (much more energetic). I'd be the vocalist/lead guitar, and smash my guitar at the end lol :)
OR
anarchy in the UK by the sex pistols if Johnny Rotten would do the vocals with me...lol, i'd play anything, just tag along really :)

"Trapped Under Ice" with Metallica. I'd love to sing/scream it while they played behind me. I'd love to play the drums on it with them (I CAN play the drums and this song; the rhythm guitar part, too). If I could play Kirk Hammett's solos I'd BE in Metallica : )

I would perform Lauryn Hill's Forgive them father! "OH MY GOD What a great song" Its about the many people you come across in your life who've stabbed you in the back, so I think I might gather anyone I consider to have done that to me and sing it Just to them. It'd be like cleaning out your worst cupboard wouldn't it? M x
p.s. If you like great tunes and you haven't heard this one, find it and enjoy! Lauryn Hill, The miseducation of Lauryn Hill, Track 10!

I think i'd choose walk by pantera. or everytime i die by children of bodom. I'd be a guitarist, i'm not sure whether rhythm or lead, as i get very nervous.
