It's called trench composting. It's fine. Same rules though, no meat, fats, grease, shiny paper, no pet excrement. Just remember it will take awhile to decompose and will still need moisture. Ideally you should have the waste in the smallest pieces possible. I know one lady who "whizzes" her kitchen waste in the blender before taking them to the garden and pouring them into the trench, kicking some dirt over the top. To each his own.

Provided it is just vegetable matter and no animal or fat products then it's fine. I don't do that, but I know several who do. I had an elderly neighbor who just dumped her scrapes on the garden beds and turned them into the soil. Her garden always flourished every season.

If everything is all in one heap it generates heat as it decomposes & does so faster
