Pretty vague question. An employer can hire pretty much anyone they want. If they hire someone to replace you, that is their option. What does YOUR giving notice have to do with your boss hiring someone?

Is it your job hes given them and is he sacking you in favour of them? Need more details really. If hes planning to get rid of you cos your work is bad, timekeeping is bad or another valid reason, then yes. If hes not going to sack you and hes giving you a different job then it depends how he terms that, and what the other job is etc.
