The difference is more than just having one cell or having many cells.

Unicellular organisms have only one cell, and that cell has to perform all the functions of the organism. Bacteria, many protists, and some fungi are unicellular.

Multicellular organisms have many cells, but the important feature is that the cells are specialized to do certain jobs within the organism. In plants, cells are specialized for taking in water, making food, storing food, transporting materials, and so on. In animals, cells are specialized for making hormones, sending nerve messages, moving, exchanging gases, and so on. In this manner, the whole organism works because the various cells in the various tissues and organs are doing all the necessary functions.
