To keep it topical, they must still be living.
After all, if they were dead, you would have lots of awkward silences in your conversation, right?

Alton Brown

For those that don't know of him, he's a living well of knowledge as far as culinary and food sciences are concerned. Myself, I have aspirations of moving cross country for culinary school next year and I've always looked up to Chef Brown. There isn't a time that when I listen to him speak or read from his books that I don't walk away amazed at how much he knows and how much I learn.

If I could I would love to just be able to sit down with him for a day and talk about his life and my own, his adventure through life, what his inspirations were and are and just to ask for advice on so many different things.

Daisaku Ikeda. He is the most honored man of whom few have heard. He has over 200 honorary PhDs and honorary professorships from places like Harvard and Oxford.
Ikeda is the only leader who stood at the Berlin Wall in 1961 and said, "This wall looks impregnable, but it will come down within thirty years." 29 years and one day later, the wall came down. He infused the top of the Soviet hierarchy with humanism so that, when the time came to either allow the abolition of the USSR to proceed, or massacre rebelling citizens, the generals chose not to fire their weapons at the people.
