Depends. Many, most, want self identity, some want assimilation. Most want equal treatment or special treatment (reparations, compensation). Most want to be together in groups, villages, communities like the Armenians in Glendale or the Chaldeans in Michigan. Most want to celebrate the things about themselves and their culture that is different, special, fun or historical like the Germans Octoberfest.

1st is to satisfy their basic needs....(food, shelter, clothing, medicine, education, sex....etc)
2nd is safety..(physical security for self and family, job safety, health, ....etc)
3rd is the love and belonging within and other ethnic groups..
4th is the esteem needs...(achievements which will get the ethnic group recognized, respect from other ethnic groups, ...etc)

Ethnic groups are not homogeneous, so there are no needs or wants that are associated directly with ethnic groups. That is a fallacy that causes people to make assumptions based on stereotypes.

I work for NHS Direct and we use it to record how many people from all ethnic groups know about the service and if certain groups do not we find out why
eg is it advertised in different languages etc
the callers still give us grief for asking the question though!!

It depends on the ethnic group. But I bet ethnic groups want something that represent them. symbols that remind them of their ancestors and where they orginated. Some they do, eat, drink, celebrate. But don't make it too much, they might not like it.
