Mark Knopfler on Dire Straits 'Sultans of Swing.' It makes the hair on the back of my neck stand up every time. Seeing this question has prompted me to play it on Media Player and I'm listening to it over and over as I type this.
Another favourite is Carmine Appice on Rod Stewart's 'Mandolin Wind'.
Also near the end of 'Goodbye to Love' from The Carpenters there is a very fine guitar solo which always does it for me. This is not very cool or fashionable to admit to, but then I am also over sixty years old, and not into J Hendrix or the other much more modern names also quoted here, some of which are unknown to me.
