I'm guessing you mean stuff that's intended more for 18+ in age. Check out:

Samurai Champloo: the same guy who created Cowboy Bebop made this...

Blood+: The action, themes, and the complexity of this anime make it mature.

Paranoia Agent: This is not for everyone, mainly because it's a lot harder to understand than most animes. It is very in-depth and requires some interpretation on the viewer's part. It is a psychological thriller by one of the best anime directors/creators ever.

Basilisk: The action & violence... and mature/suggestive themes, lol...

Death Note: I guess this would be considered mature, because if a younger child were to watch it, it might put some bad ideas into his head and turn him into a demented person in the future...

Ninja Scroll: Okay, a few VERY EXPLICIT scenes here and there, but the storyline is good, and this one is pretty tragic.

Noir: You seem to like shooter animes, and this one is a pretty good shooter, except this time it's about women. They're assassins trying to find out about their past.

Paprika: This is by the same man who created Paranoia Agent. Also a psychological thriller.

Perfect Blue: Also by the same man who created Paranoia Agent and Paprika. This is also a psy-thriller, that is very mature... Really not intended for younger audiences.

Wolf's Rain: By the same guy who created Cowboy Bebop, and directed by Tensai Okamura. This is post-apocalyptic and is very in-depth. And quite sad too.

Eureka 7: Though most people won't say this is exactly mature, but there are themes throughout the anime that are meant mainly for older teens and young adults. It's a mecha anime, so the action is good. It is also partly a romance.
