So I'll be driving from New York to Chicago and have one more day of sightseeing. I'd like to stop somewhere along the way between the two cities and do (or see) something interesting. Any ideas?

The Henry Ford Museum/Greenfield Village located in Deerfield MI has the second greatest collection of Americana in the US only the Smithsonian has more and better things. It is one of my favorite museums in America and I think that all Americans should visit it at least once in their lives.
The timing on it works out nice too because you wind up in the Detroit area at the end of a days drive from NYC ,spend the night and then do the the museum the next day, spend another nigtht and then drive to Chicago in the morning.

Cedar Point Amusement Park in Ohio close to Cleveland area.
Voted to have the best and scariest rides in there.

cleveland ohio has some interesting things for you to see. if you're into nature, you can check out the botanical gardens. if you're into music, they have the rock and roll hall of fame. if you like sports, they have the pro football hall of fame. if you get there in time, you might also be able to get tickets to see cleveland indians play. they also have a lot of museums and an amusement park. if you like military history, you can go visit the u.s.s. cod.

stop in at hershey for a bit then go into pittsburgh for the nightwill make decent half way piont

You could stop in Amarillo, Texas for some barbecue, if it isn't too far out of the way for you.
