American Beauty is the best album for songs and not jams, so if you want to get into them get that and work your way into the concerts.
For songs check out Box of Rain, Wharf Rat, Ship of Fools, Scarlet Begonias and Friend of the Devil, they're probably my top 5 favorites.

For people who aren't really fans, probably the songs from "Touch Of Grey" would be the most appealing. This is one of their more accessible and commercially successful albums.
