The rules state that they if a penalty shot is to be awarded and the goalie has been pulled they just give the team a goal. Therefore, If the player has a clear-cut breakaway, the ruling would be to give him a goal. The same goes for throwing your stick when a player is on a breakaway. Usually throwing your stick at the puck/player with the puck would be an automatic penalty shot, but if the goalie has been pulled then it will be a goal.

It wont be a goal unless the referee hasnt stopped the play and the puck is in the net. The rule this year is when a guy is on a clear break away and you trip him from behind. Its supposed to be a penalty shot but its always the referee who decide the limit
.In this case i would call a penalty shot unless the guy was about 10 feet away form the empty net. Its the referee s judgement in that case.

From the NHL rulebook. Note that this year you cna score if you're in the neutral zone too, previously it was only past the red line.
26.1 Awarded Goal – A goal will be awarded to the attacking team when the opposing team has taken their goalkeeper off the ice and an attacking player has possession and control of the puck in the neutral or attacking zone on, without a defending player between himself and the opposing goal, and he is prevented from scoring as a result of an infraction committed by the defending team (see 26.3 Infractions –

If a penalty shot were to be awarded instead, it would be on an empty net, which serves no purpose so they award a goal to the player tripped.

Rule 91 in the NHL Rulebook directly addresses your question in Paragraph C:
If, when the opposing goalkeeper has been removed from the ice, a player in control of the puck is tripped or otherwise fouled with no opposition between him and the opposing goal, thus preventing a reasonable scoring opportunity, the Referee shall immediately stop play and award a goal to the attacking Team.
