we have a science project. mine is HOW TO PRESERVE WHOLE LUSCIOUS TOMATOES. put the cleaned tomatoes in a sterilized jar filled with boiling water and salt. then remove the water after 5 minutes. my Q is how will i pasteurize the sealed jar (still with tomatoes) for 30 minutes????

what will be the result? will the tomatoes stay fresh or not???

Pasteurization (or pasteurisation) is the process of heating liquids for the purpose of destroying viruses and harmful organisms such as bacteria, protozoa, molds, and yeasts.

You need a large kettle. After the jars are capped you put them in the kettle in water that you heat to a soft rolling boil. That is how you pasteurize canned tomatoes. The tomatoes will be canned so they will taste like canned tomatoes. However if they are canned in glass jars they will not absorb the metallic taste of a metal can. They will taste better than commercially canned product but they will not taste like a fresh tomato off the vine.

Raw vegans do eat dehydrated food. They do not, as a rule, consume pasteurized juice, as it has been heated to the point of being considered cooked. Raw foodists avoid canned produce, as it has been cooked.
