What kind of wood is a palette usually made out of?

it varies with the load the pallet is designed for.
pine for light loads
elm /beech /scyamore for heavy loads

All the pallets I see are made from fir or some other cheapo fast growing wood. Have never seen the woods mentioned by the second answer and given the cost/use, it's hardly any wonder.

Incidentally on mainland Europe most pallets carry a deposit which ensures their return. In Northern Ireland the 'loyalists' burn hundreds of thousands of these along with old tyres on the 11th July to celebrate the Battle of the Boyne and presumably the Protestant "Enlightenment".
