absolute value of (x-3) > 8
so you can have two answers
(x-3) > 8
x > 11

Also
-(x-3) > 8
-x + 3 > 8
-5 > x (if x is less than -5, for instance -6, then the absolute value of (x-3) is more than 8. example, |-6-3| > 8
|-9| > 8
9 > 8 checks

x > 11

Add 3 to both sides. Result: x > 11. Done!
