You must have an older truck with a carburetor for it to do that.On the base of the carb is an electrical solenoid that extends when the ignition is turned on and retracts when the ignition is off.It's purpose is to allow the carb to totally close to prevent dieseling.A simple way to work around this quirk is to shut it off while still in gear and foot on the brake (automatic trans) or with a stick,let out the clutch in gear to stall the motor.

Dieseling or engine run-on is a condition which can occur in spark plug gasoline powered internal combustion engines whereby the engine keeps running for a short period after being turned off, due to fuel igniting without a spark.

It is probably idling too fast and is "dieseling". Have the idle speed checked and also check for a vacuum leak.

Buy gas with higher octane. That should cure it.
