the word for "the fear of everything" is panphobia.

A phobia is a fear. Phobia will often be tacked onto the end of a root-word to describe a particular type of fear. So for example:

Spiders are arachnids. Arachnophobia is the fear of spiders.

There are all types of phobias. If you're looking for a particular name of a type of phobia, you need to be more specific.
