Make sure you go to Universal Studios for two days, pay for the food/drink meal pass, all around fast pass for rides. Make sure you go to The Mummy ride, Dueling Dragons.

Ten years, how long ago did Animal Kingdom open? If you haven't been there, GO!
And i know you said nix on the rides, but you must, absolutely MUST ride "Soarin'". It is in Epcot (best park obviously), and it is a must must must! Get a fast-pass in the morning because the line is so long you could probably die in it.
And be sure to check out the night fireworks shows Illuminations (epcot) and Fantasmic (sp?) at MGM.
Pirates of the Caribbean has been remodeled, as has Small World (still annoying as hell, but worth riding once to see the changes), and Imagination (with Figment).
And just a personal suggestion, since it's my favorite, try to spend an entire day at Epcot. The countries are still wonderful (catch the drum show in Japan), and it is easily the most entertaining park for adults and kids alike. I hope you have a great time!!

Will you be riding rides? Thanksgiving is one of the busiest weekends and you will absolutely need a good touring plan. My agency does custom touring plans. Two other good options are "The Unofficial Guide to Walt Disney World" or "Tour Guide Mike". A good plan will literally save hours of time wasted in long lines.
One thing I enjoy is Raglan Road at Downtown Disney. It has live music after 9PM - mostly cover songs w/ a Celtic twist. Alot of fun. Make your reservations directly w/ the restaurant rather than through Disney Dining.
You don't mention your age - if you're over 21, the Adventurer's Club in Pleasure Island is a lot of fun.

MGM has Osbourne Light, that is worth the trip alone. Also, how about character meals, they are great. Depending on your group size you may want to check out Mickey's Very Merry Christmas and backstage passes.
We were there last Thanksgiving and it was great. Do a dinner at Liberty Tree Tavern in Magic Kingdom, the prefect Thanksgiving meal.
Do not forget Fantasmic, Finding Nemo the Musical and The Motor Car show.

Definitely the classics like Pirates of the Carribean ( which they just redid), Haunted Mansion, and the newly remodeled Space Ship Earth ride( the golf ball) at Epcot. For new rides check out Buzz Lightyear's Space Ranger Spin and Soarin. Buzz Lightyear is cool because you get to shoot a laser gun while riding it. Soarin is great because you feel like you are flying.

I'd say consider a vacation rental rather than a hotel if you are going with a group, and mix it up a bit with must sees, and off the beaten path attractions.

TOWER OF TERROR!!! the test track is also kinda fun, it is supposedly the fastest ride currently, although it didn't really feel that fast. i would try to go on all the rides!
