as good ol cat38 skipper says.......
vinyl...Seyvelor comes to mind....are pool toys. Don't take them anywhere but the pool.
now, Zodiacs....made from PVC and Avons / Caribes/ Achilles made from Hypalon are a whole 'nother story....I've had my 10 foot Avon for ten years and done all sorts of heavy duty things with it, up to and including dragging 40 foot of 3/8th inch chain and a 40 pound anchor over the tubes a number of times....
the ones that stow in a bag for the trunk of the car come either with an inflatable floor or plywood floorboard.........plywood floorboards will drive you MAD putting them in and out.......the inflatable floor limits you in horsepower but is still o.k.... a ten foot Avon with an inflatable floor should take 3 people, fishing gear and a8 hp motor and be fine for lakes, rivers and near shore experiences.....they are expensive...probably up around $2500-3000 now a days but what is your life worth?

A vinyl inflatable is about as safe as those little floaties that kids wear on their arms ...
A proper inflatable like a Zodiac or Caribe or others are very safe and difficult to puncture. I have fished up to 40 miles offshore for tuna in a 26' inflatable and it was quite safe. There are many inflatables in use by military, law enforcement and other civic agencies. I have a smaller 2.8 meter inflatable that we use for our tender and it is difficult to puncture. A little care with your hooks, knives and other sharp stuff and you will be fine. Your repair kit - don't leave shore without it !!

Yes, depending on the user and the conditions the user puts the inflatable into. There are many many types of inflatable craft. You might be interested to know that some RNLI lifeboats are inflatable. Actually they are a RIB, known as an Atlantic 21.

Wal-Wort sells those for children, it more like a play tube and they not worth nothing more that playing in waist high water.
Some more expensive ones are more abuse prone. If, they get a hole they have separate chambers to stay floating and get you in to shore. I understand what you want and it sound good as you have a boat ready to go when your are. I keep my Fishing gear in the trunk can be driving around and see a good spot and not have to think how I should have brought my fishing pole as it always with me if I in my car.
Just buy something nice with an air pump and be careful and you should be OK. I would not go too far from shore, and always have a life vest. Watch for tree stumps as they may be more trouble than a hook. Air it up good as it give less wrinkles for a hook to hang.
In the link you can see in center picture. One man fishing and the other drinking beer with one hand on the motor. He thinking, "If this fool poke a hole in this boat I giving it the gas and head for shore and he can fall out and swim"! LOL!

Just look in the classifieds and get an inexpensive john boat with a trailor. That way you wont have to worry about air leaks.
But yes, using an inflatable to go fishing is a dumb idea.

My sevelor inflatable lost one air chamber in a lake nearby . Lucky for us , nice warm water and a short swim to shore. Could have been serious if we'd been in any other spot.

depends on where you going ; how far out etc; they are not punture proof; I am sure that they have some durability to it but anything can happen a leak, a puncture , a tear etc. ; it is always better to be cautious with the one life that you have

The kind you describe can be fragile. Stay in shallow water and wear a life jacket.
