I just goin to open my restaurant .It used to be arestaurant before there have big (about 3'longx1.5'highx2')I never tuch it till i start cooking food for testing ..a week later the sink started to smell(in the drain) So i think it time to do some tinnk with this grease trap .
How to clean it?

If your in a large city they do have people that come around like a garbage truck and suck this stuff out. In the Army, this was the worst of the worst jobs and, was saved for the worst of the baddest guys that did the worst for the day. That's how bad it is.

If it's a restaurant size then your going to have to get a 55 gallon drum and a small shovel, maybe some scrapers. Then your going to have to get some very dirty clothes and rubber gloves and, I hope your nose isn't to sensitive.

Get in there and start cleaning, scraping and shoveling or, call the man and have him do it, pay the price.

Go to Lowe's plumbing department, and buy the bottle of stuff in the plastic bag. Pour the whole thing in there. It will stink to high heaven like rotten eggs, but it will clean it out.

you have got to get it sucked out by a pro and use rid-x or something like it.
