... soooo, if vegetarians do get into valhalla (for fighting & dying bravely), what then do they feast on?

One has to wonder if the description is literal or metaphorical. Or if each of us, if we live and die within the bounds of what we believe, will be treated to our own version of heaven/valhalla/afterlife... If Christians will walk on roads paved with gold, but Muslims treated to virgins. Friend of mine gave me that theory, and more and more I believe it. If this is the case, then a vegetarian, whose soul desires to remain so, would be given the treatment he desires, not a literal translation of that depiction.
On the other hand, if the description is literal, then is it possible that only the earthly body is vegetarian, and not the spirit/soul?
And, in response to one of the other answers, I would suggest that it is easier for some to kill a man who is threatening their life/family/freedom than it would be to kill an animal who is presumably innocent. Therefore, it is entirely possible for a vegetarian to be rewarded for fighting and dying bravely!

I think the cauldron also uses some vegetables to cook as a broth. So, if there's any vegetarians, they should still be well fed.

But, given the requirement to enter Valhalla, was to die like as warrior in battles, I wonder how many vegetarians will qualify, since they wouldn't even kill animals?
