They are delicious. My mother makes them in a Mexican recipe. She boils them, then makes a sauce with maza, red chiles, garlic, cumin and the broth from the boiled neckbones. I repeat, delicious.

They make a great stock for Lentil or Split Pea soup.
Just barely cover them with water and let them boil for a few hours, but wrap them in cheese cloth.
After you have your stock, remove the bones and carefully separate the boiled meat from the bone, carefull not to get any of those small fragile neck bone parts from hanging out in sombody's bowl of soup.

Pig is not a meat that is very health due to the fact that pork do not sweat - that's the reason for which they roll in the dirt.
Beside that, they eat and eliminate the good food (we as humans eliminate the bad one!)
All the toxins are in the flesh that is eaten = that's dangerous!

Love them,
do not drown them in hot sauce.
Love them with rice or egg noodles cooked in the broth.
Wonderful, eat them all of the time.
