Mate everything the Beatles produced was pure gold.
I think the best place to start would be to get "the Beatles 1" album. It has got 27 of their no.1 singles. The only problem is that it doesn't have anything off Sgt. Peppers or the White Album. Great way to start though: http://www.amazon.com/Beatles-1/dp/B00004ZAV3/ref=sr_1_7/102-1089982-6927323?ie=UTF8&s=music&qid=1192008938&sr=1-7
Otherwise get the Red and Blue Cd's. The red disk covers 1962-1966 and the blue disk covers 1967-1970. This would be the most comprehensive way to do it.
Don't listen to people who are telling you to get "Sgt. Peppers" or "The White Album" first. I think the best way to discover the Beatles is to go right to the beginning and slowly progress through their albums. You will see a massive change throughout their career. I'm almost jealous that you are just discovering the Beatles. I've only been a fan for 5years or so and I'm still discovering stuff.

All of them. Start Sgt. Pepper's. Then the White Album. The whole albums all the way through from start to finish.
If you like Strawberry Fields, you'll probably like Lucy in the Sky With Diamonds, Penny Lane, and a Day in the Life. But seriously, listen to every song ever made. Their catalog is amazing in every way. Best band ever.

everything the beatles have done is fantastic! its too hard to pick which ones, but they go thru different phases. start at the beginning. thats mainly the rock and roll stuff. i love early beatles. then the psychedelic era, which strawberry fields come from. i dont know how to describe the ending of their career, but my favorite albums are from that era. the white album and abbey road. if you are wanting to sample things, then try the anthology albums. and the timespan albums. (like 1962-66,,,67-72).
what an adventure you have before you,,,and what fun.

For me, it's easier to list the songs that aren't good than the ones that are. Some of them are:
Mr. Moonlight
You Know My Name (Now Look Up The Number)
It's Only Love
I Don't Want To Spoil The Party
Baby's In Black

Anything composed solely or mainly by John Lennon would be like "Strawberry Fields Forever".

Sgt. Pepper would be a great place to start, especially if you like psychadelic songs along the lines of "Strawberry Fields."
