A substance is anything, element or compound. A pure substance is some volume or mass of the substance that has only the stated substance and nothing else.
In the real world something that is 99.97 % the stated substance is considered chemically pure, abbreviated c.p or q.p.. There are a few applicaction where c.p. is not clean or pure enough (carbon in nuclear piles, for example) but 99.97 is very very clean.

A pure substance has a fixed boiling and melting/freezing point at a particular pressure. For example, pure water boils at 100C and freezes at 0C at atmospheric pressure. These temperatures will vary slightly if the pressure changes. Also, pure substances have sharp cooling curves. Meaning, you can find out the boiling and melting/freezing point by looking at the curve/graph. Impure substances like wav have varying boiling and melting/freezing points
