I want to install a game on the computer at work (J.C.Penney) because it gets really slow. Its not an online game, but can a company still see me playing it. What if I take out the ethernet cord? Should I install it every time i play then uninstall it when I leave for the day? I also don't want a whole speech on playing games at work. I only get around 4 customers every 6 hours on the weekdays. I am doing my job.

It all depends on what your computer tech's have installed on their end to monitor net traffic. If it's a game installed on a local computer (and if it does use the net to update or whatever) there is a good chance that, yes, they do know that you're playing games on company time. You could take the ethernet cord out of the computer while playing, that will negate all internet traffic to your PC, unless you have wireless too. You shouldn't have to install and uninstall the game everytime you come to work.

IT Administrators can see what you have installed, and if you used it if you have to enter a User Name and Password (which is most likely that you do). You can get fired if caught, if your IT guy is cool, then he might light you slide with a warning.

I doubt if you can install it as most likely are locked down.
