A strange question, I know! But how hard is it to kick--hit, dig, whatever--through sheetrock to get to an adjoining room? How long would that take, if it's possible?

Sure its possible. The wall studs have about 14 inches between them minimum on usual construction and its quite easy to kick the drywall with your heal and break it.
Would take about 30 seconds to be thru it into the next room.

Well if you are stuck in the room yes you could kick a hole in the wall. As other readers have explained there is only 14 inches of space between the studs. You would have to be thin enough to pass through this small opening. Also as others have told you there may be pipes and or electrical wires in your way.

Because of this there are a couple of options that are much better. Open and go out the window. If this is a two story home and that is not an option, in most residential construction the hinges to the door are on the inside. Remove the hinge pins and the door will open. The easiest way however is to unlock the door. The button is always on the inside unless the door has been reversed to lock you in on purpose. In which case you will still have to deal with whomever is on the other side.

Depending on what all might be in the wall in terms of piping, electrical, etc. it might be 5 or 10 minutes, but it wouldn't be a big task for someone to kick a big enough hole excape.

Since the studs are typically on 16" centers, you would have a space of about 14 and 1/2 inches to slip through. If there were some piping in that stud space, you might have to move over to another space and try again.

if you a decent site person 1 to 2 minutes, if you are asmall person 5 to 10 min

about 2 days, no you cant kick Thu dry wall, now days they use 5/8 ths, thick drywall
and you will brake your foot first,
