The answer is contained in the question. Fats and lipids are almost synonymous. A molecule of fat having phosphate is phospholipid.

The cell is able to easily change size and shape. This is because the phospholipid bilayer is a fluid, so it doesn't have a set shape. Edit: When i say that the cell membrane is a fluid, i mean that it acts as a fluid, thus the fluid mosaic model of the cell membrane. The Cell membrane can move without tearing and can "fix" itself after breaking like a fluid would. But, I think that Both surfaces of the membrane can interact with water and other molecules is the correct answer because the cholesterol in the membrane is what makes it easily change size and shape.
