I know that polysaccharides are insoluble in alcohol, but I don't think the others are very soluble, either...Mono and disaccharides might be slightly soluble in alcohol.

As far as Benedicts, monosaccharides and some disaccharides do react with Benedict's, but polysaccharides do not.
