The only Xbox 360 currently being sold with the 65nm "Falcon" Chipset and HDMI is the Halo 3 Edition of Xbox 360.
Other than that you will have to look for a 360 Pro/Core with HDMI Listed as an option on the box (or get an Elite)
As for the 65nm "Falcon" chipset, no one is really sure when all of the 360's being sold will have that chipset feature included. It has been speculated that all 360's being made/built by Microsoft after November/December of 2007 will have the new chip included.
Keep in mind, I just got a new 360 from Best Buy in July, and when I looked at the build date (located under the faceplate on all 360's) it said 09-17-2006. So try not to buy it from Best Buy, as they are still selling their "stock" of 360's that they mass-purchased from Microsoft many months ago.

Ahh, yes the falcon. I've already done all the research on this, and it's IMPOSSIBLE to tell if you have a falcon or not. I'd go with the refubished ones, because they do replace some of the parts in those to make it better. My 360 has only froze once, and it wasn't too hard to fix (reboot...done) and I've never red ringed. I'm not saying it's not possible to red ring, I just think that this year microsoft will wise up and extend the warrenty, or issue some manditory update that will fix it. But whatever the problem is, theres usally a way to fix it. Chances are if you buy a new one, it will either be a falcon, or a bit better than the old.

the only xbox 360 that has hdmi is the $480 xbox 360 elite
the only to tell if anything has a new chip is to do research on any differences between certain models

I have the Xbox 360 Elite and it works fine for me. But if you still have your doubts and would rather get the 65nm chip Xbox 360 then I suggest you wait. I heard that those new versions might be released in December.
